Butter Chicken
Silky, mildly spiced tomato-cream curry with tender grilled chicken. The dish that made Indian food famous worldwide.

Ingredients
700 g chicken breast (cubed)
60 g unsalted butter
150 ml double cream
400 g tinned chopped tomatoes
1 large onion
1.5 tsp Kashmiri chilli powder
1 tsp kasuri methi
1 tsp honey
Instructions
Mix chicken with yogurt, turmeric, cumin and salt. Grill or pan-fry until charred. Set aside.
Melt butter in a pan. Sauté onion until soft, then add ginger-garlic paste and cook 2 minutes.
Add blended tomatoes, Kashmiri chilli powder and cook on medium heat until oil separates (10–12 min).
Pour in double cream and honey. Stir to combine and simmer 5 minutes.
Add the grilled chicken pieces. Simmer gently for 10 minutes so they absorb the sauce.
Finish with dried fenugreek leaves (kasuri methi) and a knob of butter. Serve with naan.
