Crispy Potato Samosas
Golden, flaky pastry triangles filled with spiced potato and peas. The ultimate halal snack for any gathering.

🥘 Ingredients
4 medium potatoes
100 g frozen peas
12 samosa or spring roll pastry sheets
1 tsp cumin seeds
1 tsp garam masala
0.5 tsp amchur (dried mango powder)
1 green chilli (finely chopped)
1 litre oil for deep frying
👨🍳 Instructions
Boil potatoes until tender. Peel and roughly mash, leaving some chunks for texture.
Heat oil and fry cumin seeds until they sizzle. Add peas, green chilli, amchur and garam masala. Stir 2 minutes.
Combine the spice mixture with the mashed potato. Season well and leave to cool completely.
Cut spring roll or samosa pastry into strips. Fold one end into a cone, fill with potato mixture, then fold and seal with a flour-water paste.
Deep-fry in oil at 170°C for 4–5 minutes, turning until uniformly golden.
Drain on paper towels. Serve hot with mint chutney and tamarind chutney.
