Ingredients
500 g halal-certified mixed bone-in meat
500 g small potatoes, halved
2 medium carrots, sliced
1 medium onion, finely chopped
400 g canned tomatoes
240 g cooked or canned beans, drained
200 g fresh spinach
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon ginger powder
2 teaspoons paprika
2 teaspoons curry powder
1 teaspoon turmeric
0.5 teaspoon black pepper
0.25 teaspoon white pepper
1 teaspoon salt
250 ml water
Instructions
Check the halal-certified meat for any large pieces of excess fat, then pat it dry with kitchen paper.
Heat the olive oil in a large frying pan over medium-high heat. Brown the meat in batches for 2 to 3 minutes per side, then transfer it to the slow cooker. This step is optional but gives the stew a deeper flavour.
Add the chopped onion to the same pan and cook for 4 minutes. Stir in the garlic powder, ginger powder, paprika, curry powder, turmeric, black pepper, white pepper and salt, then cook for 30 seconds.
Add the canned tomatoes and water to the pan. Stir and scrape up any browned pieces from the bottom.
Place the potatoes, carrots and drained beans in the slow cooker around the meat. Pour over the tomato mixture and stir gently.
Cover and cook on low for 6 to 7 hours, or until the meat is tender and pulls easily from the bone. Avoid lifting the lid during the first 5 hours.
Stir in the spinach, cover again and cook on high for 10 to 15 minutes, until the spinach has wilted.
Check the thickest piece of meat is fully cooked and tender, then remove any bones before serving. Taste the stew and add a little more salt only if needed.
Serve the stew hot with the bistro salad and cherry tomatoes, or spoon it over cooked rice.

This was one of the best slow-cooked meals I've made in a very long time. The meat was just fall-off-the-bone, tender, juicy hearty, full of flavour!
