Classic Hummus

Ingredients
400 g cooked chickpeas
80 ml good-quality tahini
3 tbsp lemon juice
1 garlic clove
4 tbsp ice-cold water
3 tbsp extra-virgin olive oil
0.5 tsp smoked paprika
1 tsp salt
Instructions
If using dried chickpeas, soak overnight and boil until very soft. If using tinned, drain and reserve the liquid.
While warm, blend chickpeas in a food processor for 1 full minute until they form a smooth paste.
Add tahini, lemon juice, crushed garlic and salt. Blend for another minute.
With the motor running, drizzle in ice-cold water, a tablespoon at a time, until the hummus is very light and fluffy.
Taste and adjust lemon and salt. Transfer to a wide bowl.
Make a well in the centre, drizzle with olive oil, sprinkle paprika and optional pine nuts. Serve with warm pitta.
