Crispy Falafel
Golden, herb-packed chickpea fritters with a crunchy shell and fluffy interior. A Middle Eastern staple — great in wraps or on their own.

Ingredients
250 g dried chickpeas
1 small white onion
3 garlic cloves
40 g fresh parsley
40 g fresh coriander
1.5 tsp ground cumin
1 tsp baking powder
2 tbsp sesame seeds
Instructions
Soak dried chickpeas in cold water for 12 hours. Drain. Do NOT use tinned chickpeas — they are too soft.
Blend chickpeas with onion, garlic, parsley, coriander, cumin, coriander seeds, baking powder and salt until finely ground but not smooth.
Refrigerate the mixture for 30 minutes — it helps them hold shape.
Roll into 3 cm balls, flatten slightly, and coat in sesame seeds if desired.
Heat oil to 175°C. Fry in batches for 3–4 minutes until deep golden all over.
Drain and serve immediately in warm pitta with tahini sauce, cucumber and fresh tomato.
