Baked Kibbeh
A Lebanese classic of two layers of spiced lamb-bulgur dough sandwiching a savoury pine nut filling — baked until golden and sliced into diamonds.

Ingredients
200 g fine bulgur wheat
500 g lean lamb mince
2 medium onion
60 g pine nuts
1.5 tsp ground allspice
0.5 tsp ground cinnamon
4 tbsp olive oil
to taste salt and black pepper
Instructions
Soak fine bulgur for 20 minutes. Drain and squeeze dry. Combine with raw lamb mince, grated onion, allspice, cinnamon and salt. Knead well — this is the dough.
For the filling: fry onion until golden, add lamb mince and brown. Stir in allspice, cinnamon and pine nuts. Season and cool.
Preheat oven to 190°C. Oil a rectangular baking dish.
Press half the kibbeh dough into a smooth, even layer in the dish.
Spread the cooled filling over the dough. Cover with the remaining dough and press flat.
Score the top in a diamond pattern with a knife. Drizzle with olive oil. Bake 35–40 minutes until golden brown.
Rest 5 minutes. Cut along the scored lines and serve with yogurt and fresh salad.
