Harira Soup
Morocco's iconic hearty soup of lamb, chickpeas, lentils and tomatoes, thickened with a flour-tomato mixture. Traditionally served to break the Ramadan fast.

🥘 Ingredients
300 g lamb (small cubes)
200 g canned chickpeas
100 g red lentils
4 ripe tomatoes
2 tbsp tomato paste
2 celery stalks
60 g vermicelli noodles
to taste saffron and warming spices
👨🍳 Instructions
Brown small lamb pieces in a large pot with oil. Add onion, celery and fry until soft.
Stir in tomato paste, fresh tomatoes, saffron, turmeric, cinnamon, ginger, pepper and salt.
Add pre-soaked chickpeas, rinsed red lentils and 1.5 litres water. Bring to a boil, skim, then simmer 40 minutes.
Mix 2 tbsp flour with 4 tbsp tomato juice to form a smooth paste (tedouira). Stir into the soup.
Add vermicelli and cook 5 minutes. The soup will thicken considerably — adjust with water if needed.
Stir in lemon juice and fresh coriander. Serve with dates and lemon on the side.
