Nigerian Suya Skewers
Nigeria's favourite street-food — thin strips of beef threaded on skewers, coated in a spiced groundnut paste and grilled over an open flame until smoky and deeply caramelised.

🥘 Ingredients
600 g beef sirloin or rump
100 g roasted groundnut (peanut) powder
1.5 tsp paprika
1 tsp ground ginger
0.5 tsp garlic powder
0.5 tsp cayenne pepper
0.5 tsp onion powder
3 tbsp vegetable oil
👨🍳 Instructions
Blend groundnut (peanut) powder, paprika, ginger, garlic, onion powder, cayenne, kuli kuli (if available) and salt into a dry rub.
Slice beef sirloin or rump against the grain into very thin strips (4–5mm). Thread several strips onto long skewers, keeping them flat.
Brush generously with oil, then coat all sides with the suya spice mix, pressing to adhere.
Grill over high heat (charcoal is best) for 3–4 minutes per side until charred and cooked through.
Rest 2 minutes. Serve on newspaper or a board with sliced raw onions, tomatoes and extra ground pepper.
